About Just Cheese
Just Cheese isn’t just a name – it’s a whole philosophy. But our story begins long before the first wheel was turned.
In 1997, the Anderson family left behind the fast pace of Johannesburg and settled on Amanzi Farm, tucked just outside the quiet town of Greytown. Drawn by a love of the land and a desire for a slower, more grounded way of life, they made a home among the rolling hills of KwaZulu-Natal.
It was there, years later, that they were introduced to the traditional art of Dutch cheesemaking by their neighbour. When she retired in 2017, the Andersons bought the small cheesery and carried on where she left off, preserving her age-old techniques and dedication to raw milk, handmade cheese.
From the very beginning, the cheesery was a family affair — every curd stirred by hand, every wheel carefully tended. In time, Just Cheese outgrew its first home and found new roots at Springvale Farm, a working dairy near Nottingham Road in the heart of the KwaZulu-Natal Midlands. Here, surrounded by green pastures and morning mist, the cows graze freely and produce the rich, raw milk that forms the heart of every cheese we make.
Today, the tradition continues with the next generation. Kate Anderson, daughter of the Peter and Jeanne, now leads the cheesery with the same hands-on approach, a deep love for the craft, and a commitment to keeping things simple.
No additives. No shortcuts. Just Cheese.
Our Cheeses
At Just Cheese, we specialise in traditional Boerenkaas — a raw milk, Dutch-style farmhouse cheese with a rich, full flavour that deepens as it matures. Beyond our beloved boerenkaas, we craft a few other special cheeses – a cheddar/emmental hybrid; an 18 month aged parmesan; feta and haloumi.
Each of our cheeses is made by hand in small batches and aged with care, allowing each wheel to develop its own personality — from mellow and creamy to sharp, nutty, or bold.
Below are a few of the varieties you might find on our table, at the market, or in our maturing room. Make your next cheeseboard stand out!
Young Boerenkaas
5–8 Weeks Matured
Smooth and mellow with a creamy mouthfeel. This young version is subtly tangy with fresh dairy flavours and a gentle sweetness that makes it perfect for snacking, melting, or serving on a soft sandwich.
Great for: Toasties, picnics, and kids (of all ages).
3 Month Boerenkaas
3 Month Matured
Smooth, buttery, and beautifully balanced. This medium-matured boerenkaas strikes a perfect harmony between youthful creaminess and a developing savoury bite. Notes of grass, warm milk, and a subtle nuttiness make this a crowd-pleaser and a table staple.
Pairs well with: Fresh fruit, light red wines, and soft sourdough.
6 Month Boerenkaas
6 Month Matured
Firm, complex, and full of personality. At six months, this cheese has developed a deeper umami flavour, with a rich nuttiness, hints of caramel, and a slight crystalline texture starting to form. It’s a cheese that lingers on the palate and shines on any cheeseboard.
Great for: Grating over roasted veg, pairing with chutney, or enjoying alongside a good glass of red.
9+ Month Boerenkaas
9+ Month Matured
Firm, crumbly, and full of character. Our aged wheels are matured for at least a 9 months to 1 year, allowing the natural cultures to bring out deep umami notes, hints of caramel, and a lingering sharp finish. A true cheese-lover’s cheese.
Perfect for: Grating over pasta, enjoying with dark bread and pickles, or pairing with full-bodied red wine.
Pepper Mix Boerenkaas
Young Flavoured Boerenkaas
Warm, spicy, and full of bite. Cracked black, white, and pink peppercorns bring heat and complexity to the smooth, nutty base of our boerenkaas. The result is bold but balanced — ideal for those who like a cheese with a little attitude.
Pair with: Cured meats, fig preserves, or a robust ale.
Wild Garlic Boerenkaas
Young Flavoured Boerenkaas
Bright, earthy, and aromatic. Infused with wild garlic leaves, this cheese has a savoury depth with gentle garlicky warmth and a spring-like freshness. Never overpowering — just the right amount of woodland charm.
Try it with: Rustic breads, mushroom dishes, or a crisp white wine.
Italian Herb Boerenkaas
Young Flavoured Boerenkaas
A Mediterranean twist on our farmhouse classic. This wheel is infused with a fragrant blend of Italian herbs — think rosemary, oregano, thyme & sun-dried tomatoes — that lift the creamy base with aromatic, garden-fresh notes.
Perfect for: Melting on toast, pairing with olives and sundried tomatoes, or adding to pasta dishes.
Cumin Boerenkaas
Young Flavoured Boerenkaas
A nod to classic Dutch boerenkaas with cumin seeds folded into the curd. The result is a warm, aromatic cheese with a slightly nutty bite and a lovely balance between spice and creaminess.
Pairs well with: Rye crackers, chutney, or a crisp farmhouse ale.
Cheddem (Cheddar x Emmental Hybrid)
Aged 4-6 Months
A unique blend of cultures and character. This six-month-matured cheese brings together the creamy sharpness of a traditional cheddar with the sweet nuttiness and subtle eyelets of an Emmental. The result is firm yet springy, with a gentle tang, a hint of alpine sweetness, and a wonderfully open texture.
Perfect for: Melting into sandwiches, slicing onto crackers, or serving on a cheeseboard for something a little different.
Parmesan Style
18-Month Aged
Sharp, crumbly, and deeply savoury. Aged for a full 18 months, this raw milk hard cheese develops a robust umami punch with notes of toasted nuts, brown butter, and a hint of caramel sweetness. Naturally formed crystals give it a satisfying crunch and a long, lingering finish.
Ideal for: Grating over pasta, risottos, soups, or simply enjoyed in shards with a drizzle of honey or balsamic.
Haloumi
Fresh Non-Melting Cheese
Firm, squeaky, and satisfying. Our take on this Mediterranean favourite that holds its shape beautifully on the grill or in the pan, developing a crisp golden crust and a warm, chewy centre. Available flavours: Herb or Plain.
Best served: Grilled with lemon, tossed in salads, or layered in flatbreads.
Feta
Fresh, Firm & Crumbly
Brined, tangy, and full of flavour. Our feta is firm and crumbly, with a bold saltiness and bright lactic tang that lifts any dish. It crumbles beautifully over roasted vegetables, fresh greens, or into pastries and dips.
Try it in: Greek salads, savoury pies, or drizzled with olive oil and herbs.
